New publication in Fleischwirtschaft  [19.01.26]

Daniel Einsiedel from the Department of Foodinformatics is co-author of the publication “Realistic tests without meat” in the journal Fleischwirtschaft.

The prevention of food waste is becoming increasingly important from an ecological perspective due to the resource-, cost-, and energy-intensive nature of food production.
Looking more closely at the food sector, it becomes clear that meat is one of the most valuable but also one of the most cost-intensive foods. Reducing residual flows that cannot be used for further food production is therefore particularly important in the meat sector.

This publication discusses the development of a substitute for meat for testing cutting sets and slicing machines.
